Japan Whisky Distillery Guide 2027: Yamazaki + Chichibu Tour
๐Ÿ’กTL;DRโฑ 4 min read

History + what makes Japanese whisky special

Japanese whisky traces to Masataka Taketsuru, who studied in Scotland 1918-1920 then returned to Japan and co-founded Suntory's Yamazaki Distillery in 1923. In 1934 he left to found Nikka in Hokkaido (Yoichi). For 80 years Japanese whisky was a domestic drink; the 2000s global explosion came when Yamazaki 12 won the Northern Spirits Competition (2003), Hibiki took gold at IWSC (2004), and Yamazaki Sherry Cask was Jim Murray's World Whisky of the Year (2015). Chichibu, founded 2004 by Ichiro Akuto (grandson of the Hanyu distiller) in Saitama, became the cult-collector symbol of newer Japanese single malts - 'Ichiro's Malt' now sells at auction for ยฅ300,000+ per bottle. The 2024 'Japanese Whisky' GI (Geographical Indication) finally formalized that '100% Japanese whisky' must be fermented, distilled, and matured 3+ years in Japan.

  • โ—Yamazaki (Suntory, 1923) - Japan's oldest, between Kyoto and Osaka; signature peated single malt.
  • โ—Hakushu (Suntory, 1973) - Alpine distillery; signature light + smoky malts.
  • โ—Chichibu (Ichiro's Malt, 2004) - Cult indie single malt in Saitama; lottery-only visits.
  • โ—Yoichi (Nikka, 1934) - Coal-fired direct-flame stills; Hokkaido rugged-coast single malt.
  • โ—2024 Japanese Whisky GI - Legal definition prevents imported bulk whisky being labeled 'Japanese'.

What to eat at distilleries

Each major distillery has a visitor restaurant pairing light bites with whisky flights. Yamazaki's bar menu runs ยฅ600-2,500 per 15 ml pour; Hakushu adds forest-foraged food; Chichibu is tasting-only (no restaurant). Pair distillery visits with regional food - Kyoto kaiseki after Yamazaki, Shinshu soba after Hakushu, Hokkaido seafood after Yoichi.

  • โ—Yamazaki Bar [flight](https://www.kiwi.com/en/search/results/anywhere/tokyo-japan/no-return/any?marker=533035) - ยฅ3,000-15,000 - 3-5 pours including Yamazaki 18 (if available).
  • โ—Hakushu forest lunch - ยฅ2,500-4,500 - Highland vegetables + sausage with Hakushu NAS.
  • โ—Chichibu tastings - ยฅ1,000-3,000 - 3-6 pours; no food available.
  • โ—Yoichi apple pie + Taketsuru pour - ยฅ1,500 - At Nikka's Yoichi cafe.
