Japan Whisky Distillery Guide 2027: Yamazaki + Chichibu Tour
2026-10-25 · 11分鐘閱讀

Yamazaki is Japan's oldest distillery, Chichibu the newest cult icon, and Yoichi the northern master - a 2-week Japan whisky trail hits all three on JR Pass if you book 6 months out.
Japanese whisky is a global commodity now - Yamazaki 18 trades at ¥200,000+ a bottle, Hibiki is unavailable at retail. But the distilleries themselves still welcome visitors, and if you book 6 months out you can walk Yamazaki, Hakushu, and Chichibu on a 2-week JR Pass.

History + what makes Japanese whisky special
Japanese whisky traces to Masataka Taketsuru, who studied in Scotland 1918-1920 then returned to Japan and co-founded Suntory's Yamazaki Distillery in 1923. In 1934 he left to found Nikka in Hokkaido (Yoichi). For 80 years Japanese whisky was a domestic drink; the 2000s global explosion came when Yamazaki 12 won the Northern Spirits Competition (2003), Hibiki took gold at IWSC (2004), and Yamazaki Sherry Cask was Jim Murray's World Whisky of the Year (2015). Chichibu, founded 2004 by Ichiro Akuto (grandson of the Hanyu distiller) in Saitama, became the cult-collector symbol of newer Japanese single malts - 'Ichiro's Malt' now sells at auction for ¥300,000+ per bottle. The 2024 'Japanese Whisky' GI (Geographical Indication) finally formalized that '100% Japanese whisky' must be fermented, distilled, and matured 3+ years in Japan.
